I would go with MQTT. Each of the 10 Pi5s can "listen" for the trigger message published by the server over WiFi, and can then send data back via MQTT.
A WiFi router will be easiest connection method, but you could use the server Pi as a hotspot- it runs its own WiFi SSID. I am not sure how many clients it supports so that would need testing.
