I would also agree that everyone who interacts with Linux systems at a command line should know how to do the basics with vi since it is almost guaranteed to be available.
TBH, on the command line it's vi for me. Mainly because I can easily remember the basics I learnt around 40 years ago as emacs isn't installed by default on RPiOS (and I couldn't remember any of it anyway) and I couldn't be bothered to learn yet another command line editor (nano, which seems to the recommendation on RPIOS).
For GUI text editor it's mousepad (linux) or Notepad (windows)
For code (inc HTML) it's geany or thonny (though thonny only gets used for micropython on Pico) in the GUI.
For documents, spreadsheets, etc it's Libreoffice (one MS tax is enough thank you).
For photo editing it's either Canon's propriety software or the Gimp.
