There are 2 reasons to use 4 like in the pictures.
1. It splits the weight evenly across the cells. So if you need to weigh things up to 200 pounds, then you can use 50 pound cells, they are cheaper.
2. No 2 cells are exactly the same, so there will be some variation among them when measuring the same weight. So by using 4 instead of just 1 or 2 you sort of take a little bit of that variation out, since.each cell will take 1/4 if the weight and just contribute to just 1/4 of it's own variation.
So yes, you can use 1, or 3 or 4, even 8 if you look up how to wire them up correctly.
Look up the docs for your cells and the board you got to use with them and see how to wire them up with whatever number of cells you want to use.
The only important part is that you wire them up correctly.
Having said that, there is no reason that you can't use the 4 cells in your robot.
Think of the bathroom scale picture.
You have a plate which a person stands on. That plate takes all the weight. It is placed over 4 cells, one in each corner.
Your bot can do the same. Instead of attaching the net to 2 cells, attach it to a plate that itself is coupled to the 4 cells.
But again, look up the docs on how to correctly wire whatever number of cells you end up using.
