I use GScrop with GS camera and Pi5.
Can GScrop also be used with all Raspi rolling shutter camera models?
No, because GScrop tool gets the high framerates from being able to crop frame area with media-ctl,
and that does only support Raspberry GS camera with crop capability sofar.
If so, with which rolling shutter camera model can I get the highest frame rates with Pi5?
Even with older PIs 665fps/1007fps were possbile to record with v1/v2 cameras.
No chance to go above 250fps with HQ camera.
I did some binary file hacks with imx708.ko.xz and got v3 camera good above 300fps.
But 6by9 did not want to get this binary hacking made public.
So best bet for high framerate is GS camera until just above 500fps:

Why not v1/v2?
Because GS camera uses libcamera framework and that is the future.

v1 and v2 cameras high framerate recording was only possible with raspiraw and legacy camera stack.

My personal favorite 640x75@1007fps recording was that of a closing classical mouse trap.
Since closing takes 0.01s, the closing phase shows in 9 frames, here played at 1fps:
