I think one's taste of desktop is determined by one's computing background. Where you see "eye candy", i see "Windows XP". My favorite Windows. KDE mimics Windows the best way possible. And actually puts more on top of it. You won't believe it but i have tried pretty much any desktop environment that is available to Linux, over the years. And i always come back to this. And i always wanted to be able to use it with the Pi and now with the Pi-5 it is totally feasible. The visual unity of apps is not something new, Apple did it, microsoft did it, so why not have the same thing on Linux? And yes, some kde apps suck, but you can always do a minimal install like me ("kde-plasma-desktop" package gives you only the desktop without the apps). At the expense of "K" everything.... and having to play wack a mole with much eye candy... all imho...You can also install a third party desktop environment (like KDE for example) over the "lite" version of RPIOS. This actually works perfectly and resolves "some" of the issues that you have been experiencing.
